Egg plants have been thriving at the garden!
One quick and easy way to cook them is this recipe shared by our volunteer coordinator Sharon Richardson:

slice in rounds ½ or ¾ inch thick, brush with oil, put on a baking sheet under a hot broiler. Cook 3 or 4 minutes a side, maybe less. Add salt and pepper on the second side along with a little tomato sauce (if you have some) and grated cheese on top. Any cheese works but I use either mozzarella or cheddar.
